Blueberry Pie!

Earlier this week, I got a GREAT deal on blueberries, so I'm trying my best to use them up before they go bad. Last night I made a blueberry pie and it was DELICIOUS and so very easy to make!!

Simple Blueberry Pie

2 pints fresh blueberries
3/4 cup sugar
3 tbsp corn starch
1/2 tsp cinnamon
1/4 tsp salt
1 tbsp butter
1 tbsp flour

Frozen pie crusts - thawed (they come two in a pkg and you will need both)

Preheat oven to 425 degrees.

Place blueberries in a medium mixing bowl. Add sugar, corn starch, cinnamon, and salt.
Mix gently until blueberries are coated with the dry ingredients and dump into one of the pie crusts.

Place the other pie crust on a lightly floured cutting board and use a floured rolling pin to roll out the creases where it was shaped to the pie pan.

Now you have two options...

Lattice Top:
slice the dough into 1/2" strips and lay across the pie weaving over and under to make the lattice pattern.

Full Top Crust
Place the entire crust over the top of the pie cutting the edges to fit. Pinch the edges together to make sure the filling doesn't leak out the sides.

Bake for approximately 50 minutes until crust is golden brown.

I used a lattice top this time, but next time, I think I'd do the full top crust AND then brush the top crust with one wisked egg and sprinkle with sugar.
